Easy Spicy Mango Salsa

Hello August! I have been neglecting my poor little blog and for that I apologize. After starting full time work back in May it has gotten very difficult to juggle working and mom life – the eternal struggle. But, I miss coming up with recipes even if I’m the only one that enjoys them! So, the blog is back, and I am going to put in the time to update on a more consistent basis.

First recipe after this hiatus is an easy spicy mango salsa. It’s also super quick and all the equipment you’ll need is a knife, cutting board and maybe a spoon to mix if you don’t want to use your hands. This is a light, flavourful snack or side dish and of course perfect to bring to a summer BBQ. I just realized we have so few summer BBQs left 😦 . Anyway enough rambling let’s get into it!

Easy Spicy Mango Salsa

Prep Time:  15 minutes
Cooking Time: 10 minutes
Makes: 4 cups

¼ cup of onion cut into pea sized pieces

½ to 1 whole jalapeno cut into pea sized pieces

1 large ripe avocado chopped into chunks

1 ripe mango chopped into chunks

2 small red vine tomatoes  chopped into chunks

½ cup of cilantro diced

Juice from ½ a lime

Combine all ingredients into a large bowl and mix with a spoon or use your hands. Let sit for at least 10 minutes in the fridge for all the flavours to combine.

Salt and pepper to taste.
