The day I was thinking of making this green dressing was the very same day I watched that episode of Queer Eye where Antoni makes his take on the Green Goddess dip. So yeah, you could say this blog post was meant to be.
Man, that was quite the reach. Moving on!
This dressing is excellent on heartier, denser salads and Buddha bowls. It’s got a tarte, garlicky flavour that would pair well with dishes featuring sweet potatoes, cold noodles or farro. Also it’s very easy to make ahead and store in a mason jar with a tight lid for the week. I’ve noticed that the oil doesn’t separate easily from the other ingredients when left in the fridge. I hope you enjoy! I’m going to head back to the living room and watch some more Queer Eye.

Quick Cilantro Lime Dressing
Prep Time: 5 minutes
Cooking Time: 5 minutes
Makes: 1.5-2 cups
INGREDIENTS
1/2 bunch of cilantro, rinsed thoroughly, stems removed
Juice from 1 lime
1 garlic clove peeled and chopped
1 tbs of apple cider vinegar
3/4 cup of regular olive oil
Pinch of sea salt
INSTRUCTIONS
Using a food processor, blend the cilantro, lime juice, apple cider vinegar and salt while slowly drizzling the olive oil into the mix. Continue to process until completely smooth. Add more olive oil if it is still not at your desired consistency, but only add in 1 tsp at a time.
